Peanut Butter Cookie Cups

Hi friends :]

So I recently tried (and failed, mostly) to bake a peanut butter, chocolate treat for my boyfriend I decided to find something a little more my speed to bake for him. So why not peanut butter cookies?

Easy peasy, really though.

The only difference here is you bake them in a mini muffin tin, press them in the middle before cooling, and melt some chocolate chips with condensed milk to create a fudge filled center. The richest, tastiest bite ever.

Here are the ingredients:


1/2 cup softened butter

1/2 cup creamy peanut butter

1 cup white sugar

1 egg

1/2 teaspoon vanilla extract

1 1/4 cups flour

3/4 teaspoon baking soda

1/2 teaspoon salt

Preheat your oven to 325 degrees! Now mix together the butter, sugar, and peanut butter. Add in the egg and vanilla, mix again. Finally add in the flour, baking soda, and salt (a little at a time seems to work best) until it’s all good and mixed up. Now make cookie dough balls, roughly 1 tbs in size and place in your muffin tin. Once your tin is full, place in the oven and bake for about 14 minutes.

Once they come out of the oven press them in with a finger, or a teaspoon measuring spoon and let them cool in the tin for about 10 mins. Once they have set a bit you can move them to a cooling rack (or if you don’t have said rack place them on a tin like I did).

Now for the fudge:

1 cup semi sweet chocolate chips

1 cup milk chocolate chips

1 14oz can sweetened, condensed milk

1 teaspoon vanilla extract

Simply place chocolate chips and milk in a microwave safe bowl and microwave for about a minute and a half. Stir it all up then add the vanilla and stir again. If the chocolate seems a little thick or chunky just pop it back in the microwave for a couple more seconds and it should smooth right out. Transfer your melty goodness into a piping bag or ziplock bag and pipe into your peanut butter cups! Let them cool for a few minutes and your delicious treat is ready!!


Seriously, this is super easy and stinking delicious! If you want to make it extra fancy, warm up some peanut butter and drizzle it on top!!

I’m not a big fan of peanut butter or chocolate and I swear I could eat all of these, haha. Try it out at home and let me know what you think of them!!
